Chevy's menu includes mesquite grilled flank steak, shrimp and fresh fish, in addition to traditional Mexican fare, and there are efforts in place to keep the other Mexican restaurants owned by Real Mex from cannibalizing one another's markets.   Chevy's emphasizes freshness, including having an in house tortilla maker, called El Machino. Chevy's attention to freshness is part of the appeal to its market segment, and extends even to its mixed drinks, like its seasonal fruit margaritas.

With over 70 company owned and 34 franchise locations scattered throughout, Chevy's Fresh Mex franchise restaurants, extends across 15 states, and is still doing a planned roll out that will include a number of other states across the nation within the next few years.

Chevy's is current accepting new franchise opportunities, but the requirements are rigorous.  You must have a net worth of 1 million dollars, and half a million in liquid assets, and a franchisor is expected to develop a minimum of two and often times three to five restaurants in their area within a given period of time.

Chevy's franchisers must secure their own financing; Chevy's corporate body will not act as a sublessor or financial agent.  The transaction fee to get a Chevy's restaurant depends on the number of restaurants committed to opening, the value of the territory and other factors. Royalty fees are 5%, with a marketing fee of 0.5% of net proceeds. A typical restaurant can cost anywhere between 1.8 million dollars and 3.5 million dollars to establish depending on the location of your choosing and operational costs for your specific region and local community.

Chevy's is a semi-upscale restaurant; the neighborhood should have a median income of $50,000 per year, and should be reasonably dense in nature – which means 10,000 residents within 1 mile, 100,000 in 3 miles and 250,000 in five miles.  This limits the number of options for potential franchisers to get their restaurant set up but is a requirement from the franchise company in order to operate.
