1994 was also the year that marked the $50 million dollar sales mark for the Pollo Tropical franchise family. By 1996, the Pollo Tropical franchise had launched value meals, which quickly became one of the most popular food items being ordered by customers on a regular basis. The Pollo Tropical franchise company continued to grow at a rapid pace, opening the original TropiChops in 1997, and then selling much of the Pollo Tropical name to the Carrols Corporation in 1998. By 1999, the Pollo Tropical franchise company was recorded in the Guinness Book of World Records for creating the largest ever bowl of black beans, which was featured at the XXIX Super Bowl.

The TropiChops Max restaurant was introduced in 2002, and the Pollo Tropical franchise family reached $100 million dollars in sales in the same year. By 2003, Caribbean ribs were added to the menu, and the Pollo Tropical franchise restaurants began to implement credit card acceptance systems company wide. The restaurants began to cook larger and thicker chicken sandwiches in 2004, serving not one but two extra-thick chicken breasts within a warm baguette. At this time, the Pollo Tropical franchise was continuing to impress customers with innovative recipes and constantly improving menu items. A number of new menu items were added this year, including a sandwich spread made with Peppadew, which was the most recent tropical fruit discovery since the Kiwi was discovered. Caribbean chicken soup was also added to the menu in 2004.

In 2005, TropiGrill restaurants in Orlando were renamed to "Pollo Tropical" restaurants, and in 2006, the year was kicked off with new menu items including the new steak skewer. The Pollo Tropical name finally left Florida, expanding to North Bergen, New Jersey with a new corporate owned store. In this same year, the Carrols Restaurant Group took its company public, listed as TAST under the NASDAQ market.

Today's Pollo Tropical franchise location employs more than 3,000 employees in more than 80 Pollo Tropical franchise locations all over Florida and New Jersey. The Pollo Tropical franchise name has also spread to EcuadorPuerto Rico. The Pollo Tropical franchise name is also being licensed on campuses including the FloridaInternational University, and Florida State University as well. Fourteen million customers are served every year by Pollo Tropical franchise locations. and
